How to make Tropical Chia Pudding
This is a simple yet favorite Mana recipe that you can easily prepare at home for a fast and tasty dessert. You don’t require many ingredients or advanced skills to create a dish that our guests always love while on retreat. This recipe keeps in the fridge for up to 3-4 days. We don’t recommend freezing it – it also makes a delicious next day morning tea treat too!
Ingredients:
- 1 can Kara coconut cream
- ¼ cup pure maple syrup
- 1 tsp vanilla extract
- 1 tsp ground cardamom (optional)
- ½ cup water
- ½ cup chia seeds
- 1 ½ cups chopped mango or pineapple (substitute for any berries)
- ½ cup Passionfruit pulp (substitute for fresh passionfruit when in season)
- Makes 4x servings.
Instructions:
- Mix mangoes, pineapple and passionfruit pulp together in a bowl.
- Mix chia seeds with water until chia seeds begin to expand.
- In a separate bowl, mix together coconut cream, vanilla, cardamom, maple syrup until combined.
- Add coconut mix to the chia seed mix and stir well to combine.
- Layer chia mix in a bowl (or small individual cups) with mango, pineapple mix.
- Decorate the top with extra passionfruit pulp and/or coconut flakes.
- Serve cold.
Tips and Tricks
- Chill your coconut cream in the fridge before hand for a thick and creamy consistency.
- Marinate your mango pieces in the passionfruit pulp for enhanced flavour
- If using frozen mangoes, defrost prior to mixing everything together.
- You can use alternative sweeteners if you like, including mashed dates, prune juice or honey.

What can I use instead of coconut milk?
You can substitute any type of milk for coconut milk in this recipe. If you choose a dairy-free milk like almond milk, note that it is thinner than canned coconut milk, resulting in a less rich or thick chia pudding. If not using canned coconut milk, skip the water initially, adding it only if the pudding is too thick.
Do I use black or white chia seeds for chia pudding?
Both black and white chia seeds are suitable for chia pudding. We use black chia seeds as they are easily accessible in stores and have a beautiful pop of colour.
